Until 100 years ago, the space used for cooking inside a house, nowadays called a “kitchen” was known as a “cookhouse”; meaning a place to cook. The essence of a kitchen is deeply entangled in our minds with cookery. Much so that we can simply imagine a kitchen with no dishwasher, laundry machine, microwave or even a refrigerator. But imagining a kitchen with no stove, is nothing but a room empty of all the meaning it was supposed to convey.

“Ojagh” (meaning oven) is a common word in modern day Farsi with roots in Turkish. “Digdan” and “Atashdan” are some of the original Farsi synonyms in Dehkhoda’s dictionary; meaning a place which holds a cauldron or contains a fire.

Using fire for cooking is as old as the history of homo-sapiens evolution, but according to the evidence, the first footsteps of the stove go back to 1490 A.D, in the French city of Alsace; where it seems, it was first invented. Although, if we were to look for the first stove with modern design, it would take us to England, where it’s almost been two centuries since the era of modern stoves. Of course, there have been great advances regarding the aesthetics, quality and efficiency.

It hasn’t been long since the era of traditional, metallic stoves which we would imagine when hearing the name “stove”, to modern day stovetops with incredible beauty and efficiency. These days Italians are the top designers when it comes to modern stoves. Although, during recent years, the market for local stoves has been given a new life, due to the various and high-quality products made by the Iranian brand, “CAN”.

How rigid is a stove with a glass screen?
Since ranges are less popular compared to stovetops, CAN stoves, ranging from 2 to 5 burners, are all made as stovetops with 3 types of materials and sent to market: glass, steel, and a combination of glass and steel.

The glass stoves are made with 8 mm thick security glass. This type of glass is much more rigid than you would imagine. In lab tests, a 4 mm pane of glass withstood a 5 kg spherical ball dropped from 2.5 meters with no damage. The glass is only cracked when a sharp object deals 10 newtons worth of force to a small surface. In the end, the glass would break with severe temperature change, but it only breaks into small, blunt pieces.
Which one’s better? A steel top or a glass top?
The major advantage of steel tops compared to glass tops, is their flexible nature, which allows for more variety and appeal to more people. But the idea that contradicts the frigidity of a glass top against a steel one, is that steel tops are much harder to clean, since stains and fingerprints easily sit on a steel surface; rather than a glass one.

All the while, technically there is no difference between steel and glass tops in aspects of resistance or practicality; and they could be chosen based on kitchen design, materials and color of other appliances. Although the various forms of steel tops with different shapes and corners, makes them more appealing to customers. For that reason, most consumers choose steel models over glass ones.

Quality provided with beauty

The most important attribute in popular CAN products is the short stem of the control valve. Meaning there is only 53 mm distance between the main pipe and the top of the valve. This characteristic gives the stove a more modern and beautiful appearance and adds to the glamour of the kitchen. This is only a glance of the minimal design that CAN engineers are expert in.

Currently, there are several types of control valves used in the production of CAN stoves, mostly of Italian Sabaf and some Iranian models. Iranian valves are made of brass, which has a higher thermal resistance compared to aluminum valves and takes longer to heat up. In the cycle tests used for these valves, the brass valves have a higher number of cycles. When pushed and rotated, the control valve rotates up to 160 degrees. During cycle tests, when this valve is put under pressure, the machine rotates the valve many cycles and then returns it to its original condition. This test is conducted at 90 degrees Celsius; this is the same temperature which the bottom of the stovetop would reach if all 5 burners are lit. The rotation of the valve must be done up to 40 thousand times correctly and without fail. After these steps, the valve undergoes a “grippage” phase; meaning the grease inside the valve dries out, and the shaft adheres to the wall body, preventing rotation. The success of these tests shows the incredible lifetime of the valves uses in CAN stoves and as seen; they work perfectly for more than 20-25 years without fail.

Iranian valves or Italian valves?
The rotation angle of Iranian valves is 160 degrees; meaning that the intensity of the flame is highest at 90 degrees and lowest at 160 degrees. Whereas the rotation angle of Italian valves is 210 degrees; highest at 90 degrees and lowest at 210 degrees. This difference in angle helps the consumer adjust the flame with higher domain and accuracy compared to Iranian valves. In other words, the consumer has a 70-degree domain in Iranian valves and 120-degree domain in Italian valves, giving them higher maneuverability with the Italian valves.

The importance of flames and burners in providing thermal capacity
Nowadays the burners used in CAN stoves come in Italian Sabaf and Iranian in different stove models. Sabaf burners can reach up to 11.3 kilowatts per hour of thermal power provided that all burners are lit. In similar circumstances, Iranian burners produce an estimated 10.4 kilowatts per hour. Higher thermal power in a stove, indicates more gas entering the burner, producing more heat and faster cooking.

On the other hand, the type and shape of the flame coming out of the burner is very important from a technical point of view. Sabaf burners used in rice cookers are of DCC or double crown type. In this case, the flame is seen in the form of two crowns; It includes an inner flame and an outer flame that together cover the entire space under the container on the burner. The long crown directs the heat upwards and creates a significant upward thermal power.

It is interesting to know that in older burners, the "Triple Ring" model was also offered, which created three rings of flame, but did not provide high thermal power. Because the triple ring directs the heat of the flame around and horizontally, while we know that it is the tip of the flame that provides the most heat. This is why we see a higher thermal power of 4.5 kilowatt hours in double crown burners.

While triple ring burners are still used in the production of some brands of Iranian gas stoves, the use of triple ring burners in CAN products has been abandoned by emphasizing the use of the best up-to-date technology.

The Iranian double crown flame is available today under the name DEFEND and creates a double crown for the flame. However, this flame is different in appearance and shape from the Italian Sabaf type; With respect to the efforts of Iranian craftsmen, the fact is that the flame intensity in the Iranian DEFEND burner is somewhat weaker than its Italian counterpart, providing a thermal power of 3.8 to 4.0 kWh.

In addition to these burners, the use of newer models of Sabaf series 5 and 6 series burners, which have much higher efficiency and provide a thermal power of more than 12 kilowatt hours, is on the agenda of the engineers and designers of CAN gas stoves.

Heat engineering in ovens
One of the sensitivities in the design of stovetops is to place knobs and engineer them in such a way that they do not get hot with the heat of the flame while the stove is on, and the user can work with the knobs easily whenever needed.
In some stove models, a humped design is used, which prevents the gas valves from heating up in any way. In other steel or glass models that do not have a hump, the knob thermal shield, which is glass, is used to prevent the valves from heating up.

The heat entering the stove is transferred in two ways of conduction and convection. During convection, heat is transferred from the appliances to the targeted piece and heats it up. Aluminum, bakelite (a kind of plastic) and zamak are some of the materials used by manufacturers to make volume knobs on the stoves. The problem with zamak is its high heat conductivity, causing it to heat up fast. Also, bakelite looks cheap and low-quality due to its plastic form and offers low marketing value. Because of this, CAN engineers have made the volume knobs on the stove from aluminum, to prevent the knob from heating up. Therefore, volume knobs used on CAN stoves show lower levels of heat absorption compared to zamak; as well as higher density and weight. On the other hand, the material used in the umbilical piece which decreases the convection rate is polyamide plastic (PA) which is fireproof and of adequate integrity and resistance. Even the wires used in the tray, the lighter and etcetera, are completely fireproof.

gas, electric, induction; Which is more efficient?
Categorized by energy consumption and the method of generating heat, CAN ovens are produced and supplied in three types of gas, electric and induction. Induction ovens use induction heating instead of heat conduction and advance the cooking process by inducing energy into food molecules using magnetism and electricity by concentrating waves and increasing molecular movement; Like the technology used in microwaves. Faster heat transfer and uniform heat distribution are the advantages of this type of oven. However, it is necessary to know that since induction stoves require a strong current and high amperage, they have significant electricity consumption, and their use is not suitable for home users in Iran who use 16 ampere single-phase meters. These types of ovens are more suitable for users who have access to three-phase electricity at home, Like the residents of residential towers.

Is the integrated cast iron grid better or the island?
Glass ovens have two types of island or integrated cast iron grids. The advantage of the integrated cast iron grid is that the support surface of the container placed on them is higher. Most consumers also believe that placing dishes on the integrated cast iron grid is more stable. The reason for this is that the support level of the pot is lower on the cast iron grid of the island and the edges of the large pot are outside the cast iron grid, but instead the advantage of using the cast iron grid of the island is that it is easier to wash and clean the stove in this case.

CAN product sales experts say that most Iranian customers prefer to choose models in which an integrated cast iron grid is used on glass gas stoves, and on the other hand, they prefer cast iron island grid for steel stoves. Experts believe that this issue is caused by the mental image of many customers who do not consider the safety of glass gas stoves with cast iron grates very high, and they think that the glass of these stoves are more vulnerable and less durable; Meanwhile, the results of qualitative tests and experiments show the opposite. Because the cast iron grid does not bend at all, and to strengthen these ovens, a piece called a spacer is used under the glass or steel plates of the oven to raise the level of support.

The problem of not having the strength of large containers on the cast iron grid of the island is also mainly due to the use of large and non-standard pots that are used on the home gas stove. In this regard, we should know that there is a special standard pot for each burner. For example, for rice cookers, this standard provides for a maximum pot diameter of 33 to 35 cm.

Timer, a safe and practical tool
In glass stoves (for example, in the IGT 502 model or in the Sabaf model, the GT 502), after pressing the power button of the timer, we can set a time for each of the oven flames separately, so that the flame will automatically and safely turn off after a certain period. The reason for ensuring the safety of this feature is the flame extinguishing process. This feature works in such a way that the timer gives a direct pulse to the thermocouple. The thermocouple has a heat transfer mode and has two wires, which are steel in the upper part and brass in the lower part. The heat transfer that occurs between the two creates an electrical pulse that enters a piece called a bobbin (made by the Spanish Orkli brand) in the valve. This trans has a booster that has a magnet on the back and makes it hot when we press the valve. The generated heat creates a magnetic state and holds the piece inside the coil until the gas inlet flow is opened. When turned off, the part cools down and no pulse is sent to the coil, thus releasing the magnet and closing the valve. In this way, no more gas comes out of the valve, and this is how the thermocouple works.
Here, we must not forget that the thermocouple has a separate function, and the timer function does not interfere with the work of the thermocouple.

Functional accessories
The converter of the cast iron network of the coffee maker, which is cruciform, is used for the flame spreader of the coffee maker and provides the possibility of boiling water in a container with a small bottom diameter, such as a coffee maker. The burner of the coffee maker has a heat transfer power of 0.9 to 1.0 kilowatt hours, and using this converter makes the coffee maker more stable on the stove.

The converter on the cast iron rice cooker grid is also another accessory that is offered free of charge to buyers of CAN stoves. Meanwhile, nowadays, many domestic manufacturers have removed the provision of this type of accessories from the default sale package of their products.

Why is the offering of rice cooking flame spreader not available for CAN products?
The flame spreader for cooking rice or wok converter is a traditional tool in kitchens that is used to steam rice in pots with a convex bottom. Meanwhile this tool reduces the efficiency of the gas stove, and greatly reduces the thermal power and raises the height of the pot bottom. Since convex pots do not sit very firmly on the cast iron grate, using this conversion makes such pots sit better on the stove.
Meanwhile, in modern pots with a flat and standard bottom, the standard burner installed on the stove transfers heat uniformly to the bottom of the pot. For example, the double crown burner installed on CAN gas stoves distributes heat evenly to all parts of the bottom of the pot.
The use of the traditional flame spreader for cooking rice in today's gas stoves is mainly a result of the mentality that is the result of our elders’ experience and their habits of using the traditional cooking appliances has nothing to do with the realities of kitchen appliances today.

Functional and adjustable like "Enif"
The Enif gas stove is one of CAN's special products, in which a valve and a Dual burner are used. This means that the valve has two gas outlets, and the burner also has two gas inlets. One of the pipes is connected to the primary inlet and the second inlet to the secondary inlet. The advantage of this burner is that it is possible to adjust the middle ring of the burner in low or high mode separately. In the second case, the middle ring and the outer ring can be increased and decreased at the same time. This feature means that during cooking, there is no need to move the pot on the gas stove to use a smaller or larger flame in accordance with the cooking conditions, and the user can use the flame in a small or large size whenever necessary, according to their needs. Or in cases where the food is cooked and a weak flame is needed to keep it warm, only the middle flame can be kept on low.
In the Enif model, the style of the valves is also new and a microswitch is used in them, which eliminates the need for a separate microswitch to be placed on the valves. Because with the rotation of the hand, the electric current is applied to light the flame immediately. But these types of knobs have a microswitch valve next to them, and the microswitch is activated by turning the knob.
In the Polaris model, the arc-shaped arrangement of the stove valves has caused the designers to use the name Polaris, which means pole star, for this product. The Polaris oven is one of CAN's special stoves that has different designs and shapes and uses an integrated cast iron grid and an island.
Another feature of Polaris is the depth of the stove plate, which causes the contents to collect inside the stove tray and prevent it from leaking into other areas of the kitchen. But on the other hand, it is more difficult to clean stoves with a deep tray. Meanwhile, the steel plate of the oven is always easy to clean immediately after the food overflows and before it dries.
Another interesting technical point in the Polaris model is that 3 large burners are used in the Polaris model, which is suitable for the needs and uses of most Iranian families who usually use large pots.
